This classic remains one of our favorite soups in the fall. A simple basic recipe.
Ingredients (4pers):
- Pumpkin 400g
- 1 tomato
- 1 onion
- 1L vegetable stock
- 100ml cream
- Olive oil
- 1 clove of garlic
- Nutmeg
- Pepper and salt
- 1 scoop of collagen (10g)/ person
Preparation
- Peel the pumpkin and cut it into cubes. Peel and deseed the tomato, cut it into pieces. Peel and chop the onion and garlic.
- Fry the onion together with the garlic in olive oil until translucent. Add the vegetables and season with salt, pepper and nutmeg. Let it stew for a while.
- Pour over the stock and let it simmer for 20 minutes. Mix. Taste the soup and season with salt and pepper if necessary. Serve the cream separately. Add a scoop (10g) of collagen to your soup bowl. Finish the soup with pumpkin seeds, croutons, herbs of your choice...
